Every space within the estate—including the kitchen and its garden—is closely tied to a unified concept, anchored in a deep sense of belonging to our organically certified estate in Las Compuertas.
The organic garden is the natural source of the freshest ingredients used by our winery restaurant, 5 SUELOS – COCINA DE FINCA. These ingredients, together with those supplied by carefully selected local producers with whom we work in close collaboration, make possible a Km0 (garden-to-table) culinary offering—an artisanal, seasonal, living cuisine with strong local identity.
The garden is integrated into the restaurant, recycling organic matter from the estate, allowing visitors to enjoy a playful experience. This space is designed with various visual layers: a perimeter flower belt that protects plants from natural predators (and is also edible), areas for aromatic herbs—some native, like wild thyme—and non-hybrid plant varieties. There is a mix of vegetable and fruit colors (such as heirloom tomatoes or carrots), and decorative elements created by repurposing used wine barrels into large planters or trash bins made from recycled gas canisters. The garden includes a compost area, greenhouse, and drying shed (in development), and it connects with visitors through a walk among the vineyards, leading to an open-air lounging area.
